INGREDIENTS
400 grams of rice
2 ñoras
3 heads of garlics
1/4 liter of oil
2 mature tomatoes
1/2 kilo of mere
1 mullet of 1/2 kilo
1 sea hen
1/2 kilo of angler
1 egg yolk
flour
salt
pepper
PREPARATION:
He/she starts to the fire a boiler or an aluminum pot. In this recipient he/she puts on half of the oil and, when it is very hot, the ñoras is fried. These they are taken out and they throw in the oil the heads of the fish; once fried they retire. In the same oil, they put on the tomatoes, peeled and dives, and when they are made they are added two liters of water. The ñoras is mashed in the mortar, together with a head of peeled garlics; he/she throws in the pot allowing it to cook five minutes. In that broth he/she cooks the fish, cut in thick slices gone by salt (without being exceeded). Once cooked the fish is taken out, but it is left to the heat so that he/she doesn't cool down. A cup of broth is reserved. The rest is proven of salt, he/she throws the rice and he/she allows to cook to slow fire during twenty minutes.
In the mortar another head of peeled garlics is mashed, he/she mixes with the reserved broth and with all this the fish is dewed in the moment to serve it. The last head of garlics is used to make a garlic or alioli that it accompanied to pleasure the rice and the fish. They are served separated the rice first and later the fish.
