The Pepper
The queen of the spices, the pepper has dominated the European trade during centuries. Today India is the first world producer, continued by Indonesia, Malaysia and Brazil. It is about a plant climber that can arrive to the 4 meters high with leaves of green dark color and clusters of green berries if they are immature and red when they mature; the berries, once collections, they are put to dry off so that they loose their grains.
Black Pepper: the berries are immature and they dry off in the sun during 7-10 days until they take the black color.
Pepper Blanca: the berries are already reddish for the maturation, they are placed in water until they lose the external and then dried membrane.
